COMMUNAL COOKERY.
' PROPOSALS IN DUNEDIN. DINNER DELIVERED FOR.Is Od. A scheme for the establishment of a daily delivery of cooked food has been started in Duncdin, a preliminary public meeting having decided to form a compa'ny for the purpose. Mrs. E. F. Leech, who presided, said the proposal was designed to fill the gap canard by the scarcity of the household maid by relieving mothers of young families of the task of preparing tilt' principal ineal of the day. "What Duncdin does to-day," she added, "Auckland and Wellington will be prepared to do to-mor-row." Mrs. 0. Gilkison said it was proposed to establish a central kitchen capable of serving 60 families, where food would be prepared, and from -which it would be distributed. The food for the mid-day meal would be delivered in containers lined with glass, which would hold the heat for four to six hours. The dinner would simply be lifted from the containers holdihg the plates and placed on the table. There would be no washing of plates —they would go back to the kitchen to be sterilised. It was estimated, that in coal and labor alone this plan would reduce the cost of rneals for SO families by £7OO a year. Other speakers who advocated the experiment were Professor Malcolm, Mrs. Lindo Ferguson, and Mr. Miuk Cohen. Jt was explained that a hot cooked dinner could be delivered for Is Cd, this comprising three courses soup, meat-, two vegetables; and pudding. The menu would give a limited choice, and the order for the dinner would have to be given a day in advance. Tlve meeting decided to proceed with the formation of a company, and applications were thereupon made both for shares and for registration as customers.
