BUY SOLIDS NOT FAT!

To the Editor. Sir,—To use Mr Freeth's own words, "What a splendid field for investigation is here presented!" ''Milk from average Friesian cows contains less solids than milk from average Jerseys. According to authorities the average Jersey milk is said to contain 14.89 per cent total solids, whereas average Friesian milk is credited with 12.12 per cent total solids. The solids not fat would figure out at 9.23 per cent for Jerseys and S6l per cent, for Friesian?. These figures are of course based on 100 lbs of milk. On a fat basis they would mean 2.03 lbs of total solidß per lb or butter fat in Jersey milk, as compared with 3.45 lb of total solids per lb of butter-fsi in Friesian milk."—l am, etc., W. M. As you will see from the above letter, there is a difference of 2.77 lb of total solids in 100 lb milk in favor of the Jersey, while in solids not fat there is only .62 lb of a difference. Bo the solids increase with the fat?
