BUTTER AJJD CHEESE. FiNE DISPLAY AT THE WINTER SHOW. As is only, to he expected in a district where dairying is tlie most important industry, the display of butter and cheese at the Winter Show, which opened yesterday, is a prominent feature- Entries in butter show a decline as compared with previous years, but in cheese there is a decided increase. Tiie staging of the exhibit this year is a decided improvement 011 past years, and reflects credit on those responsible (Messrs H- King and J 1!. Rowlands and several local dairy factory managers, of whom Messrs Koller, Bell Block, Robinson, Mangorei, and Waswo, Franldey Road were prominent). It is benched this year in the firstt annexe, which lias been specially floored and decorated. Entrance to the hall is by an archway composed of variously Ibranded butter-boxes, whilst the walls are tastefully decorated with photographs of various prominent factories round the mountain, starting at Patua. and finishing up at Bell Block. There are also other interesting records. Prominently displayed are the various trophies for competition, these being relieved with pot plants, a'ud giving a finished toucli to the display, which is a highly creditable one. The judges were Messrs Grant, Robertson, Thump ■■,-.!). and Stevenson, of the Grading Department They remark that the general quality of the butter exhibits is quite equal to that of other years. As in former years, the same difficulty was experienced in separating the prize-winners, a fact that goes to prove that the makers are working on uniform lines. The finish and general appearance of the whole of the exhibits leaves very little to be desired} but an improvement might be made in the packing of some of the exhibits, which are not sufficiently solid The quality of the cheese exhibits is uniformly good., considerable difficulty being experienced in separating the winners, which were of fine flavor and texture. At previous shows a number of entries came forward showing a tendency to harshness, but this fault is'en. tirely absent on this occasion. A pleasing feature is the very fine quality of tht' cheese in Class it, which was selected from export cheese, and, while the outside appearance is somewhat soiled, the quality generally compares very favorably with that manufactured specially for the show. The finish of the majority of the general entries leaves little to be desired, very little mould showing, a fact which reflects credit alike to the makers and to Mr. Koller, in whose charge the various exhibits were placedBUTTER.
