BUTTER AND CHEESE.

THE IMPERIAL DEAL. In connection with the butter and cheese deal, factory directors have (says the Wellington Post), received from tii3 National Dairy Association of New Zealand. Ltd., advice of the teims of the Imperial Government's purchase of cheese am! butter.

The price for cheese is lOd per lb f.o.b. ocean steamers. Factories are required to pay all storage up to an average of three months. For instance, if half the cheese was held in store for two months and the other half for four months, factories would require to pay nil storage, a-s the average would be*' only three months.

Factories must also carry all risk of insurance until the cheese is placed f.o.b. ocean steamers, but Jlr. Massev has promised to do his utmost to have the Imperial Government carry all risks from factory door. In the mc-antime factories must attend to their own insurance to f .o.l'.

An advance of £0 per erato of cheese will be made after the produce has been in store for 2S days. Applications for advance must be made through the Government grader in the same way as last season, with the exception that it must be proved to the grader's satisfaction that the cheese is protected by insurance in store. The price for butter is 157s per cwt. f.o.b. ocean steamers for first grade, and Is per cwt. less for every point below first grade. Factories to participate to the extent of 50 per cent, in any profits made by the Imperial Government when selling the butter in London. Exactly the same terms apply as to storage. The insurance is the same as for cheese, with the exception that before the profits (if any) can be paid to factories all storage must be paid from such profite. Advances of £3 10s per box will be made on the same terms a 9 advance is made to cheese factories. The Imperial Government lias refused to buy third grade cheese. Nothin" has been definitely stated regarding whev milled, and dairy butters;"but Jlr. Ma?' sey has cabled to ascertain if thesf will bo accepted.
