COMPARATIVE VALUES, Mr. F. W. B. GrevillC, editor of the N£w Zealand Dairyman, contributes the following to the Wellington Evening Post:— As I propose giving evidence before the Cost of Living Commission, I would be glad if you would publish the following table for the information of the Commission and the genera! public. I want to show the comparative value. of 1001b. of milk with that of butter and cheese when sold in the Wellington markets at present wholesale •and retail prices. For various reasons •the richness of milk varies, but for the purpose of this calculation I am taking ■as a standard milk containing 4 per cent, of butter-fat. 100 lb standard quality milk will produce 101b Ooz cheese. 1001b standard quality milk will produce 41b lOoz butter. 100 lb milk is equal to 10 gallons for household purposes. At retail prices comparative values are:— 101b Ooz cheese at Is per lb, 10/4% 41b lOoz butter at Is 8d per lb, 7/8% •1001b milk, 10 gallons at Is lOd per gallon, 18/4. At wholesale pricctb comparative values are:— . 101b 6oz ehcesc at 10% d per lb, 9s . 0.94 d. 41b lOoz butter at Is 5/fd per lb, Gs 10.09 d. lOOlbs milk, 10 gallons at Is per gal-. lon, 10s.
