AUTOMATIC BAKING.
L'SIXr; MODERN METHODS. Four Wellington bakers doing a large business have decided to amalgamate their baking processes so as to use a modern plant. The capital of the venture is .1:35.000, and the machinery to J,-, used is of English manufacture. Two 1 11: 11 will be able to do the work of at I .Ist eight required for a similar output under the old system, and. the whole process will go on behind piate-glass windows. so that the public, may see how they get bread without human hands. Vr. \V. A. Kelhnv. president of the Master Bakers' Association, and one of the new syndicate, stales that from the information he received hi) realised that the automatic bakery was the thing of the future. Not. only did it make for cleanliness and economy in turning out bread, but to a very large extent it would relieve them of harassing labor troubles, from which no industry ever seemed to lie quite clear. The chief virt.ure of the automatic baking plant was the cleanliness and despatch with which the work was done. From the lime the Hour was received in the bakehouse until it was presented to the public in the form of crisp, brown loaves, the Hour or dough was not handled by human hands, but was automatically set. kneaded, made into loaves, and baked under hygienic conditions never dreamt of in the old days, and all in plain view of the public. The best plant of the kind in the world is being obtained from Joseph Baker aml Sons, of Willesdeii Junction. London. Its capacity would be 15.0(1(1 loaves |'2lb) every hour hours, which, working the full 24 hours, would mean an output of 15.000 loaves a day.
