What is a Sardine? 2. Go by the Brand. Not only are many different kinds of little fish used in the manufacture of sardines, but these are caught at different seasons of the year, and vary in quality according to the time at which they are packed. Thus you see the importance of "going by the brand." If you simply ask for " Sardines," you may get any sort of big coarse fish, not packed in season.
