THE PRICE OF BREAD.

To the Editor. | Sir,—l read with considerable interest the correspondence which has lately ap--1 peared on the above, and there is no doubt .that the New Plymouth people have much to complain of in this rei spect. If our Mayor is anxious to popularise this town, I think he might move ,' in the direction of establishing, for a start, a municipal bakery; to be followed, , if found necessary, with municipal stores, and the conversion of the abat- , toirs into a corporation butchery, and .] thus bring down the evil repute of New Plymouth being one of the most expenJ sive towns in the Dominion to live in. ; While on the subject of bread, I would .' like to mention a feature I noticed in ,' the Technical School classes for cookery 1 in the recent winter show, and that \vas the total absence of any class for good old ihome-made bread, a'most necessary accomplishment in a country like this, where many a housewife is thrown on her own resources, and has, owing to , proper lack of training, to All hgr fam ily up with the soda and acid rubbish. j Instead of this I noticed classes for best I iced cake, sweet meats, and all such ' : abominations. 'I eonskler the first and most frequently taught :lesson should be what to everyone is a necessity and not a luxury. And the sooner the children are taught how to make home-made bread from home-made yeast, the better it will be for the rising generation's ipoci iet and digestion.—l am, etc., ANTI-TRUST.
