FARM AND DAIRY.

'FISHINESS" WORSE THAN WATER.

Mr. S. Turner, F.R.G.S., who is well known throughout Taramiki, lias 'been appointed Australasian supervisor for j Messrs. J. and J. Lonsdale and Co., Ltd., the well-known British produce firm. Speaking to a Dominion reporter on the subject of moisture in New Zealand butter this season, Mr. Turner considered that greati'r dagger existed in the "fishiness," which had been rather pronounced in the pas't year. "Fishiness," lie said, " is the main thing the factories have to consider. It will pay them to go to any expensa to discover the cause and have it remedied. Sonic people think it is due to too mucli moisture, but after careful enquiry I am inclined to think it is not water at all, because New Zealand, on last year's showing, with the exception of just two or three cases', is not putting too much water in 1 the butter at all. But in the two or three cases the execs.-- vas probably due to inexperienced use oi the combiu -d churn. If every manager aims at 13 pel cent, he ought to get the desired result. It is, of course, better to have 2 per j cent, less than '/» per cent, over the 18 limit.

"The prospects ? Well, they are for a large .make from Siberia and a good make oi cheese in Canada and also in New Zealand. Big cold stores have been erected in Siberia, so that the supplies may be regulated. Very big prices have gone for some time. Nothing less than a drought in Australia and Siberia can revive them, but it is yet early to orediet exactly what next season's prices will be. In the next mont'h the prospects of the English trade ought to become clearer."

Many of the cheese factories anil branch creameries of butter factories throughout , the district til,at have bsen closed (luring the winter months are again in operation, and there will be very few that have not reepened by Ist September. Cows appear to be "coming in" very rapidly at this early period ot another dairying season, and the output from the factories for the first few months shoulif easily constitute a record. —Hawcra Star.
