THAT SHOW BUTTER.
To thu Editor. Sir,—Mr. Rutherford has evidently taken a wrong view of my letter regarding the above, lie says that if 1 sign my name lie will convince me that a box of butter part filled ou a certain date and held for 48 hours in a factory cool-room and llien completed is not a fit box of butter to bo classed against 1 a single day's make. Why field for 48 hours? There are only 24 hours between two days' churning (at any rate at the time that that particular box under discussion was made). 1 quite agree with Mr. Rutherford that a box containing two days' butter is not to i be classed with one of one day's butter only, as in nine cases out of ten you must lose on color, but on color only. My argument was that Bell Block did not lose on color, but on flavor, and] therefore lost nothing through having two days' butter in that box. But if Mr. Rutherford can convince me that putting two days' butter in one box is detrimental to the flavor, I shall bo very pleased to hear from him.
