Banana Tart. Ingredients: One short crust pastry tart case, 6 bananas, 2 oranges, J cup . sugar, 2 eggs, 2 tablespoons chopped nuts if liked. Method: Prepare the pastry, roll it thinly, and line a buttered pie pan. Trim the edges, brush rim -with water, and sprinkle With sugar. Whisk the eggs and sugar till thick ■ and frothy. Peel and mash the I bananas, add to the eggs, stir in the | strained orange juice and the chopI ped nuts, and pour the mixture into the pastry case. Roll ithe pastry trimmings, cut into strips, and arrange lattice-wise across the filling. Bake in a moderately hot oven for about 30 minutes till pastry and filling are cooked. Serve hot. or sold, I with cream, custard, or banana sauce.
