When yon have a little cold meat, cut it up or mince, add pepper and salt. Cut up a large onion, cook in a It tie water until soft, and then stir in the meat and cook a few minutes, thicken with a little flour. Fry a pancake and lay it on a plate and put some of the mince on one side and turn the other half over it. Serve it at once. This is very tasty served with or without vegetables. FRUIT JUICE CAKE. Sift Jib flour, add 2 teaspoons baking powder, and sift together three times. Cream 3oz butter, add 6oz sugar, and cream together. Add 2 beaten egg yolks and the flour alternately, with a gill of fruit juice, beating until smooth each time anything is added. Fold in two beaten egg whites and bake in two greased layer tins. Make a« filling of fruit mixed with whipped cream. SPONGE MERINGUES. Slice some sponge cakes and spread thickly with jam. Pour over thetti enough sherry or, fruit juice to moiety, en.
