Fig Pudding.— Chop Alb figs very finely, mix them with jib of coarse sugar, a tablespoonful of treacle, 4 tabletpoonfuls of milk, Alb flour, jib of suet, an egg, and a pinch of grated nutireg. Put the pudding into a buttered mould, and boil for 4 or five hours. tweet Omelette.— Break g eggs into basin, omitting whites of 3, whisk well, gradually adding 2lbs of powdered sugar and 2 ozs of butter in small lumps. Stir well, to thoroughly mix the different ingredients. Next put 2ozs of butter into a frying pan, and put it over a fire, and when it begins to bubble pour in the egg mixture. Stir till there are signs of setting, then turn over the edges of the omelette, so as to form an oval, and go on with the cooking. The top is browned by holding the pan in front of the fire. Sprinkle with finely powdered sugar before serving.
