This, no doubt, has been great help, as before they had to depend entirely on their , own judg T ment, and that is where so many failed. They are now able to watch the ripening, process at the different stages, and this should enable them to make a more uuiform article. Almost every, factory is salting in the chum, and if this is done properly, it is to be recoup mended. Unfortunately, many of the managers will not take the necessary care. In many instances the salt Is not weighed, so each churning does not get the same percentage of salt. In other cases the salt is thrown on very roughly, snd not distributed evenly amongst the grainß. Inhere the salt has been thrown on in lumps no amount of working will get it evenly mixed. The result is streaky colour, which is a serious defect, and very much depreciates the value. In the factories where the combined churn has been adopted, the salting is done in a far more satisfactory manner. Thischurnis now : gaining . favour in the' Dominion. It has been in general use in Canada for several years, and why it has not been adopted here before it is hard to say. It is. certainly the greatest labour-saving machine invented for some time, so far as the dairy world is . concerned.”
COTTON IN NEW CALEDONIA
Cotton is being tried in New! Caledonia. Three samples ‘ were recently sent to Queensland for treatment and report. Two of them had been grown from Carivonica seed forwarded from Queensland, where this type of tree cotton has been developed. The other sample was of the Upland variety. The growers were anxious for a statement to guide them in the matter of making a bigger trial.
