The Nelson paper, the “Evening Mail," contains rather an amusing letter on the subject of Slaughterhouses and hydatids. “ The result of establishing municipal abattoirs at Dunedin has been exactly what was expected by those whe have studied the slaughterhouse question, 1 But for the existence of proper inspection Dunedin would most probably hive during the last week consumed myriads’of hydatid cysts and -have fattened itself upon tuberculous germs. Apropos to this I quote a paragraph written by a Sydney medico to the “ Bulletin” of a recent date : —‘ To-day - our butcher seut us some excellent steaks and BOme kidneys, for a steak and. kidney pie. '*My wife brought me one of the kidneys .with the question, “Is there anything wrong with this kidney ! I examined it, and foundthe kidney substance almost wholly replaced by hydatid cysts. If the servant had been cooking it would jprobably have all gone in Did you say steak and hydatid pie? No thanks “ This,” he adds, “ occurs every day in Sydney and suburbs.” Do Nelson cattle and sheep possess a special immunity from tuberculosis and hydatids? Or is it that we place the susceptible and delicate feelings of our butchers and slaughtermen before the public health ? Anyhow, we may be consuming with the meat we eat innumerable germs, hydatids and horrors, jail quietly and unbeknownst—except to the susceptible butcher. The soul of m.v deceased grandmother—a susceptible butcher ! Yours, perhaps full of hydatids.— Maori Men.’ ”
