BOGUS CHEESE.
The sale of oleomargarine as butler has been Btopped by special legislation in both Great Britain and United States, and it would now socm that another branch of the dairy industry nutnely, cheese, is to become the field tor the animal fat manipulators. The Pall Mall Budget has the following under the head of " What is Cheese?" "In recent months thore have beon several prosecutions in Liverpool becau&e of the sale of cluecso imported from America which contained a considerable propoition of foreign fat. Similar action has been taken in the (rlasgow sheriff court, but tho impugned article in this instanco is of native manufacture. Skim - milk choose having become unsaleable, tho makers have sought to improve it by adding cowfat, which compensates for tho cream that is taken away, and makes the cheese soft and more digestible. It is sold very cheaply, the retail price being 4d per lb. The prosecution did not allege that tho cheese was unwholesome, or that it was sold above its value, but the contention was that when a purchaser asked for cheese, ho was entitled to get cheese that was made entirely from milk. As nothing was done " fraudulently to increase tho bulk, weight, or measure of the food or drug, orconceal the inferior quality thereof," it was decidod not to convict." We should say that adding cow fat to ekim-nnlk cheese, and Belling the product as ordinary cheese, was doing something to " conceal tho inferior quality" of the article; but apparently a .special law will have to be pas<=rr3 hofore this new decepI tion can bo put down.
