HOW TO MAKE INDIAN CUTLETS
Ingredients: About one cupful of cold cooked meat, finely chopped; an equal quantity of cooked rice; small piece of onion, finely chopped; one dessertspoonful curry powder, one good tablespoon tomato sauce, little chopped parsley, salt and cayenne to taste. For shaping and covering have one tablespoon flour, some egg glazing (yolk of egg and milk mixed together), also some breadcrumbs. Method: Wash the rice well, and cook very slowly with. a small quantity of water, till the rice is well cooked and sticky (add a little more water, if necessary, when all is absorbed).

To I J shape the cutlets, sprinkle a little ! j flour on the board, take about one j tablespoon of the mixture, and with ! a large knife flatten, and form into j cutlet shapes. Lift into the egg glazing (yolk of egg mixed with A little j milk), then toss in the breadcrumbs, j ] Firm the crumbs on gently with a j large knife, and wet fry a golden - brown. Drain well. Arrange on a hot I dish, one overlapping the other. Garnish with small sprigs of ( parsley. GRIEF-STRICKEN OVER LONG GOWNS Elderly women are grieving ever i more, for the new long skirts are ageing, and if a young girl looks quaint and tall and slim with a nice little waist and a flat tummy, the elder woman looks every year of her age and even more, for the new- styles, unless they are carefully worn over a flat diaphragm corset, show bulges in the most cruel way. They cost more, too, on account of the greater amount of stuff used in making them and the bows, tucks, frills, flounces and bits and pieces that have to be used in trimming them. Sheathlike fitting long bodices in light paillettes are seen on eveninggowns which touch the floor ail the way round, but have their skirt ends in a filmy material, mostly of tulle or chiffon.
