APPLE AND BANANA CHILDREN LOVE THEM Fritters, if they are well made, are a delicious luncheon or tea sweet, especially for children. The main thing is that the batter must be crisp and not greasy. Here is a recipe, by Miss A. Gibbs, who holds the cookery diploma of the Sydney Technical College: Peel and core the apples and slice thinly. Peel the bananas, cut each in two, and split each half. For the batter use:—4oz. flour, 1 rounded teaspoon baking powder, i teaspoon salt, 1 teaspoon custard powder; 2 cup milk (sweet). Sift the flour, baking powder and salt. Blend the custard powder with the milk, then stir gradually into the flour, making a smooth batter. Have ready some hot fat in a frying pan. Lift slices of fruit into the batter, drain slightly, place in the hoi fat and fry a golden brown. Drain on white paper to absorb the fat. Serve on a d’oyley and sprinkle with castor sugar.
