CHEESE DUMPLINGS rAKE 003 grated cheese, 4 02 flour, 20. v butter, three eggs, half pint boiling water, pinch of cayenne pepper and a little salt. Put butter and water in a small saucepan, stir in all the flour at once over the fire. Stir tilt the mixture leaves the sides of the pan. Tale off the fire and add yolks of eggs one at a time and beat till smooth. Add cheese and seasoning, and, lastly the beaten ■whites of eggs. When cold, drop teaspoonfuls into boiling fat and fry slowly. Serve hot with cheese.
