THE DAIRY CLASSES SPLENDID QUALITY MAINTAINED (From Our Oicn Correspondent .) HAMILTON, To-day. Record entries have been received in the dairy division of the Waikato Winter Show, and have already been judged. Mr. J. O’Dey, North Island supervising Dairy Produce Grader, comments on the exhibits in terms of high praise. The butter exhibits were, he stated, the finest, without excepticn, he had ever seen. There had been a substantial proportion of poorer quality butter formerly at most shows, nut at Waikato that was entirely absent. An excellent feature was the exceedingly high grading throughout. The need for quality in produce cou d not be overstressed. The majority of the Dominion factories, apparently, realised the importance of quality. The export butter class was not specially prepared for show, but was taken haphazardly fron cool store, and it was very gratifying from the dairy division’s standpoint, j nd a real test of quality. The butters examined in that way had been very fine. The boxes had been in store for three months and represented the approximate condition in which they would be opened in England. All had opened splendidly, and showed little signs of deterioration in any direction. “The exhibits this year.” said Mr. O’Dey, “carried more real butter flavour than in the past.” I;i Ne% Zealand there had been a tendency to flatness, and lack of aroma due to faulty handling and improper acidity The unsalted classed, most of which was free from preservatives, had kept very well. The butter throughout V vas a great credit to the makers, body, flavour and texture generally being very fine. The quality of the cheese classes was, said Mr. O’Dey, in advance of last year, there being practically no low scoring cheeses. In most cases the texture was very close and the flavour excellent. A pleasing feature was that nearly all were rimless. Rims meant much waste, which fell back on the producer.
