WAYS TO SERVE BANANAS Fried bananas make a very good disli for the vegetable course when green vegetables are’ scarce. Curried Bananas.—Fry some bananas in butter, drain them and place in a silver entree dish in a warm place. Chop and fry an onion, then add some cooked rice and a teaspoonful of curry powder. When thoroughly cooked make a border of this round the bananas. Baked Bananas.—Pull off a strip of skin from top to base of bananas, put a little butter on them, add some lemon juice. Bake in the oven and sprinkle with powdered sugar just before serving. Marmalade Bananas.—Butter a fireproof dish, cut the bananas lengthways, spread them with a little marmalade, add a little butter and bake. Serve in the same dish.
Coffee Rice Bananas.—Make a good creamy rice pudding and flavour well with some strong coffee. Slice the bananas, and cover them with powdered sugar or some rum or maraschino. Put the rice at the bottom of a dish, spread the bananas on top, and heap some whipped cream on top.
