SCALLOPED POTATOES 2lb raw potatoes, J pint milk, salt and pepper, lloz margarine, 4OZ flour. Scrub the potatoes and peel them thinly. Then drop them into cold water. Drain them and cut them into slices one-fourth of an inch in thickness. Grease a pie-dish and put a layer of potatoes in the bottom of it. Season them with salt and pepper and sprinkle them with flour. Dot them with tiny pieces of the margarine. Continue in this way until all the ingredients are used up. Then heat the milk and add it to the mixture. Put the pie-dish into a moderate oven to bake until the potatoes are tender and lightly browned on the top. About one hour and. a quarter should be sufficient time to allow.
