OLD-FASHIONED PUMPKIN PIE
Line a tart plate with flaky or shortcrust and fill with’ the following: Boil a dry pumpkin in salted water to which a few cloves may be added, drain well, rub through a sieve, and measure 2 cups. Add 1 tablespoon butter i cup sugar, 1 tablespoon sherry, i level teaspoon grated nutmeg, the grated rind and juice of 1 lemon, or | level teaspoon citric acid and 1 teaspoon essence lemon. Roll our pastry rather thinly for top, press edges well together, brush over with egg-white or a little milk, and bake in a moderate oven for about 45 minutes.
