BANANA CHUTNEY Chop finely lib brown onions and place them in a saucepan with lib chopped dates, 8 finely-chopped bananas, and Ij cups vinegar. Simmer for 20 minutes, then add 4oz crystallized ginger, washed free from sugar, 1 finely-chopped green or red pepper, lib seeded raisins, 1 teaspoon salt, and if liked 1 teaspoon curry-powder. Place 4 cloves, 4 peppercorns, and 1 clove of garlic and 1 blade of whole mace in a muslin bag, add to mixture with 21 cups fruit syrup (left from stews or tinned fruit). Cook gently until mixture is thick, place in hot jars, and seal, well. ■
