THE MOST SUITABLE AGE. The general opinion is that the most suitable age at which beasts should be ready for the butcher is round about two years old, says the “Live Stock Journal.” At this period animals should be suitable to the requirements of the trade and consumer and leave a credit balance with the feeder—if cattle feeding is known ever to show a credit balance! The flesh of beasts approaching three years of. age and over has a tendency to become coarse, to eat dry and tough, and the proportionate yield of flesh to bone not' so satisfactory. If your object is to cater for the butcher, then resort to one of the three predominating beef breeds for your foundation stocks. There are the Hereford, the Aberdeou-Angus and the Shorthorn. The beof Shorthorn is per haps the most popular—in fact, I think it is due to its immense popularity that some small breeders have created (from.it ajnongrel typo x>f beast.yyhi.clj, has now become so prominent. ~ As to imported meat, it cannot be denied that the majority of imported carcases are of animals brcxl from th. finest stuck in the world Some of the best sires and dams are snapped up every year for shipment abroad, where they arc utilised to produce an article which is shipped back here under-most favourable conditions, assisting to drive many of our English stock breeder's out of business
