NEW SOUTH WALES BUTTER
IMFROVEMEST IN QUATJTY GOOD PROSPECTS FOR SEASON. The junior New South Wales State grader, M-. A. M. Brown, reporting to the dairy branch of the Department of Agriculture, states that generally speaking the duality of New South Wales factory butter at present being placed on 'the local market is excellent. This also aplies to the flavour, texture, and general condition. It would seem, he adds, that two principal factors have combined to brink about this result. The. much needed bountiful rains which have recently fallen throughout the dairying districts of South Wales have greatly improved the pastures and water supply, and thus supplied 4he first essential in the production of a high-class butter. Then, again, u number of factories have previously been unable to cope.efficiently with even normal supplies, owing to inefficient power, plant, and defective premises, surroundings, water supply etc. The majority of the most-back-ward of these factories, however, has now been brought up to the high standard required under the Dairy Industry Act, and others have added to their power and plants. There is, however, still a minority of factories not. yet up to standard ,and the but.; ter produced by these continues to show definite inferiority on this account. Steps have already been taken to uplift as quickly as possible the quality of these few cases. Mr. Brown concludes: "With the continuance of the present conditions regarding season and the better equipment of those factories which were deficient, it is reasonable to be optimistic in assuming that this season will be one of the best from a quality point of view, taking the manufacture of batter.in the state as a whole. Last year 82 per cent, of the output of registered butter factories -was of choicest quality . It is confidently expected that this high standard will be found to be considerably exceeded when the figures are compiled at the end of the official year, June 30, 1926."
