MILK CONSTITUENTS.
—♦ r One of the most essential features of milk as a food fox young animals in that it supplies constructive materials for growth, in this respect, one of the most important fractions of milk is its mineral matter (says Mr. William Godden, of the Rowett Institute, Aberdeen). It supplies the lime and phosphoric acid which are essential for the proper formation of the skeleton framework; potassium, which is required for the rapidly growing cells; and iron, which is ,a necessary constituent of every cell in the animal, and mdespensable, as a constituent of haemoglobin, for the respiratory processes and the maintenance of life. Other inorganic elements which play a part in the physiological processes going on in the body are also present in milk. Thus the mineral constituents of milk are of the highest importance to the growing animal. Deficiency of one or more of these constituents may result in arrested growth, .rickets, or anaemia.
