Trainees work at learning trade
BY GAIL IMHOFF Twelve trainees and one volunteer taking part in the Catering and Food Presentation Access course are gaining experience through practical work as well as in a 'classroom' situation.
The course is based in the Old Winstone's building in Queen Street, Raetihi but the trainees spend much time out and about. The course is run by Cindy Hiroti and is divided into three stages of 16 weeks each. The
basic course, which began last May, included soup making, pies, starters and roast meals. The intermediate course included cafe style meals, garnishing small dinners and cake and bread making. The advanced course
includes decorating, novelty cakes, catering for functions and Maori cooking. To help trainees become familiar with a work situation the group go to the Ruapehu Hotel where they gain experience in a commercial
kitchen. Once a week, for invited guests, the trainees cook meals including chinese and other favourites, which provides another opportunity to practise their skills. The trainees have also catered for weddings and recently catered for 150 guests at the opening of the Winstones amenities block. They have also had the opportunity to leam Te Reo Maori and have had guest speakers who have spoken on a variety of subjects. A tutor from Te Arawhanui trust is also available to help with literacy and numeracy. Mrs Hiroti says she has a great group of trainees who are keen to leam and a pleasure to teach. She hopes to run another three-stage course in early May.
