PICNIC MEALS
USEFUL SUGGESTIONS FOR ADDING SOME VARIETY. There are just a few ideas to add variety to the standard picnic lunches of sandwiches and hard-boiled eggs — which latter will, after all, be the foundation of many, if not most, outdoor meals. Fruit has the advantage of being a wholesome addition to all meals, and if space permits, coffee, kept hot in a thermos, is the ideal finish to any lunch. Here are some practical hints j which are simple enough but help- J ful: — 1. Don't take food in parcels and bagss. It looks messy especially in hot weather, and spoils the freshness of the eatables. Buy a few tins of different sizes from a sweet shop, and line them with greaseproof paper before packing. 2. Jot down a list of what you pro- J pose taking beforehand, and check it before packing into the car. This will prevent such vital articles as spoons or salt being Isft behind. | 3. Do not take squashy food — j flimsy, creamy things are a nuisance to pack and to eat. A good homemade type of cake is far more practical. 4. This is the hackneyed but cannot be ommitted in any talk of picnics. Do please remember always to tidy up all debris — remember the Ugliness Exhibition and don't qualify! 5. Do not take the same lunch - every v/eek. Ilam sandwiches and
Mm*--jam tarts become a trifle monotonous. Ring the changes with these alternative "menus," all easily and quiclcly prepared. (a) Hard-boiled eggs, with the ! yolks talcen out, mashed with pepper, salt, butter and anchovy essence, and : replaced. Buttered rolls, a good plain ; or plum cake, chocolate biscuits, fruit. (b). Meat patties and watercress, fish paste sandwiches, chocolate sponge sandwich, fruit. (c) Savoury fish patties, made from cold fish, well seasoned, with a few breadcrumbs added, and encased in pastry, Swiss roll, cheese biscuits, buttered and sandwiched with grated | cheese. (d) Cornish pasties, fruit salad from tinned fruit (but take the tins home), cream cheeses and celery.
