Take 6 apples, 2 whites of eggs, 2 tablespoonsmastor sUgar^-1 tablespoon coai-sely chopped candied pcel, 2 tablespoohS sherry, -and the thinly cut rihd Of half a lemon. Peel, Core, and slice and the apples, pUt them into a saucepan with the sherry, sugar, lemon rind put some- Water. • Gbok gently until ' tender, pass through* a hair sieve, add the stiffly whisked egg whites, and Whisk until the mixture becOmes firm. Stir in the candied peel. '
