RAISIN SPONGE
Beat into loz of gelatine, well dissolVed in hot water, the juice of a lemon rind grated finely. Beat it till it is frothy, and then add the whites of two eggs beaten until it resembles snow. Fold in 2oz of seeded raisins" fliopped small and beat a little longer. Put it in a cold place, on its serving Jish. An 'accompanying sauce might oe made of well-mixed cream and the iiquid from presei'ved ginger.
