GELATINE IF CHICKEN.
Bone the chicken without breaking the skin, if possible. Put half a pound of ham through the mincing machine, mix with a quarter pound of mince meat, and season with black pepper and salt. Spread out the chicken, lay on the mincemeat, roll up in a cloth and tie each end securely. Boil I for an hour and a half. Put between j two dishes and press by putting a j heavy weight over it.
