CELERY AND CHEESE
Grisp, fresli celery, as everyone knows, is a delicious accompaniment to cheese, and the two combine equally well when cooked. These unusual dislies are wholesome and sustaining and make delightful luneh or supper savourles : — Celery Cheese Pie. — Wash some celery, cut it into pieces about 2in. long and boil until tender with water and 1 teaspoon salt. Make a good white sauce, into which when hoiling stir 1 cup grated cheese. Drain the celery and mix it well with the sauce and 1 well -beaten egg, adding more milk if too stiff. Pour into a greas#d piedisb, cover with breadcrumbs, grated cheese and small pats of butter and bake 40 minutes in moderate oven. Quick Cheese Savoury. — M&ke sandwiches with grated cheese and a sprinlding of celery-salt between thin siices of buttered bread. Press firmly together, cut each sandwich into 2in squares, dip these in a thick batter mixture and fry in boiling fat until amount sufficienfc to maintain a fair golden-brown. -
