Ingredients: 2 cups cold cooked ■chicken, 1 cup cold cooked sweetbread, French dressing, 1 cup minced mushrooms, mayonnaise, white bread, salt and pepper. Method : Mix minced chicken, mushrooms and sweetbread together after all are flnely chopped, adding salt and pepper. Moisten well with French dressing, and stand for two hours in a cold place till the mixture is well seasoned. Drain thoroughly and mix with just enough mayonnaise to flavour. Ghill again, and use as a fllling between slices of thin white buttered bread, or bread spread with mayonnaise in place of butter. Press sandwiches together and remove crusts. Cut in three strips, or, if wanted for picnics or race meetings, leave pieces whole. If liked, a little mustard and cress or any green salad can be placed over fllling before putting the slices together. Junket Ice Cream. Ingredients : 1 quart milk, 1 teaspoon rennet, 1£ cups castor sugar, 2 teaspoons vanilla essence, 1 cup tliick ■cream, 2 or 3 grains of salt. I-Ieat the milk till tepid. Stir in the sugar and salt and pour into the freezer container. Stir in the rennet. Add vanilla flavouring. When mixture is thick, stir in the cream and freeze as usual. Knough for six.
