SIR.—In yonr issne of Saturday last, in the local column, a statement appears auent the number of tour pound loaves which can be made from one sack of flour, and which in my opinion is, to say tho least, very misleading to the general public. lam what you might call a middle-aged man and have been baking bread the host part of my life, and I could never turn out anything like tho number you mention, 90 to 93. Your first statement was uracli nearer the mark, the average being from 70 to 73 four pound loaves to tho sack, and I am sure, if you got the opinion of any other tradesmen lie would hear out my statement.
