THE DAIRYING INDUSTRY.

[By Oub Travelling Eeposteb.] Mr G. Murray, of the Cheltenham Dairy Company, has done some very interesting experiments with milk. "While there the other day he showed me a bottle of milk perfectly sweet one month old. It had not been kept air tight, only covered over, neither was there a preservative of any description added to it, Mr Murray ha 3 another bottle which he intends to keep until the falmerston North Dairy Show in June, when he will bring it down and let anyone who is interested see it. The cream is gathered fairly thick and hard at the top, but Mr Murray calculated that by a second pasteurisation he can bring it back to its first uniform state without any trouble. This is a most interesting experiment and inight prove a most useful thing for preserving milk in larger quantities.

Mr Swede, of Kangitikei Dairy Company, who took first prize at Palmerston North Show last year for his export butter, and who also secured first prize at Feilding Bhow, intends to make some butter to be sent homo to England to compete in tho greatdairy show there, We wish him good luck, and hope he secures first prize. Bangiwahia factory is doing some good scoring this year, and tho average grade is close on 93. The manager, Mr Turner, has kept a very interesting collection of all grading done by him ever since ho started out to make butter. He showed me some 98 and 99 point once, but that was in the early days.

Apiti is also doing well under Mr Falconer as manager, but the supply is falling down, and people are thinking more about sheep. Of course they cannot help doing go just now at anyrate. The milking machine it found in many places and is going in fast. Mr Fields, of Apiti, has installed an L.K.G. milker plant, and is very well satisfied with results. In fact milking with these machines becomes a pleasure. Wherever they go in one sees better cowsheds and yards, and conditions generally arc greatly improved.
