Thanks to the enterprise of the Waikato Co-operative Cheese Company, Ltd., East Tamaki is in possession of a cheese factory which, with its- most modern machinery and the thoroughness of its plant equipment, is thoroughly in keeping with the rich dairying lands of the district. The factory, which only commenced operations in December, 1915, is an imposing building. It has a concrete floor with concrete walls up to eighteen inches, the remainder of the structure being of sound timber, with a roof-covering of non-conducting heat material in the interior, the external roof being of corrugated iron. The machinery and apparatus include a Tangye 5-H.P. engine and boiler, together with three 850 gallon vats, each provided with McEwan's patent curd agitators and presses. There is also a plentiful supply of hot and cold water throughout the factory and adjacent thereto is a large whey tank, capable of holding 2500 gallons, the same being connected with the main building by a pipe. A well built receiving and delivery stage is provided in front of the main building, on which is fixed a patent " Silkeborg" weighing apparatus. This machine enables a supplier to ascertain by a glance at the indicator how much milk he delivers. The curing room at the rear of the premises has accommodation for the storage of some 25 tons of cheese, and on the shelves at present, in addition to stock awaiting export, are several samples of recent makings, which are to he exhibited in the dairy classes at the forthcoming Hamilton Winter Show. It also speaks well for the products of the factory that East Tamaki cheese has a ready sale at all the stores in the district for miles around. Near the factory is a neat and wellarranged residence, erected as the manager's dwelling house, and fortunate indeed is the company in being able to claim such a capable managed as Mr. Hugh Campbell, who has had a wide practical experience in all brandies of the dairy factory industry. Prior to his present post he was general manager of the Norsewood (Hawke's Bay) Co-operative Butter and Cheese Factory, and has been successful in winning many prizes for show exhibits in both butter and cheese section at various shows. The number of suppliers now totals 36, as against 24 for last season, and the output has already amounted to over 200 tons of choese this season.
