Pour into a mou'd. and when set turn out. DERBYSHIRE SPOXGE. Mix a teacupful of flour with one of sugar, add a pinch of salt, and' a teaspoonful of baking powder. Break into tlijs three eggs, and beat till all is thoroughly mixed, spread a greased tin with oiled paper and pour in the mixture and bake in a brisk oven for seven minutes. Then spread the sponge cake half with lemon curd a.nd half with jam. Roll up and place on a sieve till co'd, then cut into half-inch slices and scatter desiccated eocoanut over them* SAVOURY OMELET. Beat up two in a basin, beating yolks and whites separately. Add a tablespoonful of milk to the yolks, a tablespoonful of butter, a tablespoon of fine brown breadcrumbs, and tw,i tablespoonfuls of chopped ham or bacon, mixed with a tablespoonful of chopped parsley. Mix these together, then add the beaten whites of the eggs. Melt a litt'e butter in an enamelled pan, and pour in the mixture. Cook under a griller till the eggs are set and the omelet browned.
