The night before the cooking range is to be used, put two ounces or more of small haricot beans to soak in cold water. In the morning, drain the beans, put into a stew-jar, cover with. * water, put on the lid and set them in the oven, or at the side of the range, to stew gently for five or six hours. Strain off the liquid (this makes a good foundation for soup) and pound the beans thoroughly, adding nelted butter as required to make a smooth paste, salt aml pepper, and a seasoning of pounded herbs. Turn into small pots or a shallow dish, and cover with melted butter.
