MARZIPAN WALNUTS.

Boil one pound of lump sugar with just under half a pint of water, in a lined pan until it will form a ball. Remove from the gas and stir in twelve ounces of ground sweet nlmonds, and the whites of two eggs. Peaten lightly. Cook for a few minutes; remove again and add : <*ing sugar, gradually working the. mixture, till a . smfioth paste is formed. Form into balls slightly ’-smaller than a walnut and press gently on each side half a shelled walnut. Place on a cool shelf to set. If desired, other nuts may be used in place of walnuts. These, however, need not be split but placed on the top of the fondants.
