xi;w jxm;sTKY ix acckcaxu. The meat-preserving industry lias of laic years attained immense proportions both in America and Australia, audit hasalso obtained a tooling in this colony. There is one manufactory of the kind at Wellington, (wo in Canterbury, and a fourth in Southland. An endeavor is now being made to place Auckland in that respect on a level with the Southern provences. The premises ot the Auckland Meat-Preserving Company arc situate at the foot of Upper Quccn-strcel, facing the Market House, and its operations are conducted by Mr. tieorge Hulme. The company is at present tinning minced beef and mutton, pork and beef.sausages,tripe,lieefuml mutton. It is intended tocommeneeshorlly the tinning of ox and sheep’s tongues,also fruit and vegetables. The whole of the steaming is done by an engine of (i-lior.se power; the motive power used for the mincing machines being one of Crossley's gas engines. The steam chest is capable of boiling about 1000 tins, or a ton of meat at each charge. At present the meat is made up in 21b. and lib. tins, as being the most suitable sizes. The tins are set in iron trays (three dozen on each) and lowered with a pulley into the steam chest, and similarly removed when the process is finished. To the rear of this department is the tinsmith’s shop, where three hands arc constantly engaged making tins and soldering down those hat arc tilled up ready for finishing off. The (ins are then neatly labelled; the quality of the contents compares very favorably with the American and Australian preserved meats, besides being morej nicy and nutritious. When the locally-preserved beef was tested against an Australian brand, manufactured at an establishment which secured a medal at the Paris Exhibition for this article, the time boiled beef of the Auckland company was found to be superior and.moro attractive to the palate. The company arc at present exporting principally (0 saw-mill stations, the gumticlds, and the .South Sea Islands. The tins arc put up in cases of two and four dozen each.
