NEW CHEESE FACTORY.
When the directors of the Paraparaumu Dairy Compajiy decided to build a new factory they wisely decided that the best factory was not too good, and • that, they would go far for the best advice procurable. They were indeed fortunate that they were able to secure the services of Messrs Duffill and Gibson, architects of Hawcra, who have erected more factories than any firm of architects in New Zealand, and had planned Riverdale, one of the largest factories in tho world under one roof; and who have made a deep study of a seemingly simple but really a most complicated business. Mr Arthur Brown, of Hawera, concrete construction specialist, was selected as builder. It w-as decided to build in concrete, which is now in almost universal use .for this class of work, and a very fine site was secured with ample supplies of good water and a four vat factory was decided on with tiled roof. The factory is replete with every convenience, has a making room of 52 x 33, fitted with one of Collinson's tiled tanks and tiled drain for sweet whey, and with the necessary impedimenta required for the production of highgrade cheese. A starter room, neatly and strongly fltted up, opens off from the making room. The tester room is off the receiving stage, and floor is j raissu for convenience, and also to J give cool storage for rennet. The re- I ceiving stage is of Messrs Duffill and j Gibson's special design and goes the \ maximum of speed in receiving supplies, it is fitted with two up-to-date weighing machines, one for milk for cheese manufacture, and one for town delivery. Above the receiving stage an innovation has been introduced by adding a reinforced concrete tank holding 3600 gallons for main supply of water, which is drawn from a well outside the factory. The tester room is also fitted with every convenience. Milk for Wellington delivery is sent out from another landing stage with floor level of roadway dropped to allow for loading the cans out Without lifting, and adjoining this is the salt room. An office with fireplace is also provided. The curing room, 39 x 22 6in., is fitted with the very latest in shelving, ventilation, etc., and is the last word in utility and convenience. Boiler-house, with 25 h.p. boiler, 10 h.p. engine, pumps, etc.. and ample coal bunkers, to which is attached an up-to-date bath room with h. and <;• water and shower. Outside the factory is a reinforced concrete whey stand of very neat and strong design. The drainage problem, so often neglected, is tackled very determinedly by the directors, and a settling and filter tank has been constructed on the very' latest principles. Tho whole completed makes probably the finest four-vat factory in New Zealand to-day, and the directors, architects, and builder, have cause fqr coagratulation on ifs completion.
