BEETROOT FRITTERS

DOIL young beetroot until tender, cut *^ m slices, .sprinkle with lemon juice, roll m sugar, dip m batter and fry. For the batter mix together 2ozs. of flour, the yolks of two eggs and one teaspoonful melted butter or salad oil. Add three tablespoons cold water or milk and beat until quite smooth. Whip the whites of eggs to a stiff froth and stir - lightly into batter. Serve very hot, dusting well with ground cinnamon and . castor sugar.
