SAVORY MARROW

PIECES of cold cooked marrow may be used for this. Cut into -small squares, place m a buttered pie'dish, and pour over the following mixture: 3oz. flour, 2oz. butter, three yolks of eggs, a dash of cayenne, pinch salt and one pint cold milk. Stir over the fire until boiling, add two more tablespoonfuls of milk, loz. grated cheese, and the well-beaten whites of eggs. Sprinkle the top with grated cheese and bake m a moderate oven for three-quarters of an hour. Serve very hot. ;
