To the Editor op ran Nelson Evening Mail Sin,— Mr Bartlett dried some cherries with the machine that 1 exhibited at the Exhibition, and they tumid out very good, 'riiice that time I havo experimented myself, r.nd I firmly believe that', if properly managed, the drying process is better for winter use than by boiling with sugar, and certainly cheaper aud easier than the latter. I have now some on the machine as well as in the house, that those who are interested in preserving their fruit easily can come and inspect for themselves. I am further of opinion that anyone who has a proper place, and a little energy, con I ! make a good export trade of it with a good profit and little trouble. I am, &c, Eriok Okk.
