MARSHMALLOW DELIGHT Soak loz. gelatine in half-cupful cold water. Fill up cup with boiling water, stir until the gelatine is dissolved, add a few drops of vanilla essence, and a pinch of salt. Allow to cool. Lightly beat the whites of three eggs aud add to the above mixture, then add tliroe-quarter-cupful castor sugar and whip well until the mixture turns white and is thick like snow. Pour into, a mould and set for two hours. Serve with the following sauce:—Brown two tablespoonfuls sugar in a little water. Whip one-third of a cupful of cream, mixed together, and immediately pour over the pudding, just before serving.
