To-day’s Recipe

2*AIRY APPLE BETTY 2 cups fresh bread crumbs (from centre of loaf—must have all crust removed), 1-3 cup melted butter, 4 cups tart apples sliced very thin, 3 cup of sugar, 2 tablespoons lemon juice, 1-3 cup thinly sliced blanched almonds, i teaspoon salt, 1-8 teaspoon nutmeg. Blend the bread crumbs with melted butter. Mix sugar, salt and nutmeg together. Butter a baking dish. Cover bottom of dish with 1-3 of the crumbs. Add half the apples and half of other ingredients. There should be 3 layers of bread and 2 of apples and seasoning. Bake for about 40 minutes in a slow oven (350 deg.) or until apples are cooked. Serve hot with hard sauce or cold with cream. The almonds may be omitted. Serves 5. Hard Sauce 2 cups powdered sugar, $ cup butter, 1 teaspoonful vanilla, white of 1 egg, beaten stiff. (The egg may be omitted; it, merely increases the volume of sauce). Cream the butter, add sugar gradually, beating until it is light and creamy. Add flavouring, and beat again; then add white of egg. The success of this sauce depends upon thoroughly creaming the butter and adding the sugar very slowly. Place in a glass bowl and sprinkle nutmeg over 1 surface of sauce. This sauce will keep in refrigerator for several days. • ========
