CHEERING FOR BUTTER FACTORIES.
Qn reliable authority it has been stated— the statement having been published by the British House of Commons — that out of IQQ.QOOIbs or butter sold m the city of Nevf' York, about 50,000,000, or one half, has been proved to be a bogus butter. This wretched substitute has involved a loss to farmers of Borne* thing like £800,000 a year. Grease of all sorts is utilised for the manufacture of the bogus article. Lard, tallow, cotton seed, and peanut and other oils are obtained from all sources and countries. One source of supply appears to be the sewers of London, into which stakes were driven, from which stakes a fatty deposit, left by the current, is scraped every day, which ultimately" is transformed into butter, These fats are deodorised and neutralised by treatment with nitric acid, mixed with milk, cream or poor butter and churned i The; acid m this composition is, of course, very deleteri* ous, and m proportion to the quantity, is the resultant injury. Many of these products can scaicely be told from genuine butter even by experts, and *,ests br microscopes and sulphuric acid are essential to determine their true character.
