If all kitchen utensils arc kept spotlessly clean one of the first essentials of food hygiene will he assured. The larder needs constant attention. It can be kept clean most readily if shelves are constructed from glazed tiles, which can be purchased at low cost. Tiles only need to he rubbed over with a damp cloth to remove all kinds of spilled foods that would stain other forms of shelving. Unless you have an electric refrigerator it is wisest to scald milk in the warm weather, as it “turns” so quickly, even in the usual type of icechest. Cheese is best stored away in a dry, dark cupboard, and with a cover over it. Do not wrap in greaseproof paper, which will cause it to sweat and crack.
