A RECIPE.

CHEESE AND ENDIVE SALAD,

Take Jib cream cheese, J cupful tinned milk, 1 tablespoonful gelatine, 1 pint milk, cheese straws, 1 endive or lettuce, oatcakes, salt, pepper, and paprika to taste. Place cheese in the top of a double boiler. Stir till luke-warm, then mash. Gradually stir in milk. Season to taste, then add stiffly-whipped tinned milk and gelatine dissolved in a little water. Pour into a wet border mould and leave to set. When required, turn out on to a dish lined with curly endive or lettuce. Serve with oatcakes and cheese straw's.
